I would say most people go to fast food spots because of the convenience and maybe because it’s cheap. But if you take a look around, there’s another option out there. Meal prepping. It’s the BEST thing ever! Down below you can see a picture of what I made. I know…it looks very simple…that’s cause they are! But sometimes simple can be the best thing ever (previous blog post about simple cooking). Anyways, let’s take a closer look at what I made….
Starting from left to right (I made 2 of each meal)…
- Turkey burritos: I bought pre sliced turkey (like the one for sandwiches), cut up some cucumbers (length wise), made some pico de gallo, and then topped it off with some cheese. Good stuff.
- Tilapia, rice, and asparagus…with half a lime. Yup, that’s it. I thought that it might be a little plain, but it was surprisingly tasty. My plan was to add soy sauce, but I didn’t have any on hand and the lime was good enough.
- Fried eggplant and egg with rice on the bottom. Not sure if any other places do this, but I think this is a Filipino thing (tortang talong). This is a far cry from what my grandma makes, but it filled me up. I just added some ketchup to it and I was good to go.
As you can see, I think with these three recipes combined I used a total of about 10 ingredients. As for the total amount of time I spent meal prepping, maybe around 2 hours. I think I could have done it in less time, but it was my first time and I was probably fumbling around the kitchen a bit. The amount of money I spent to make a total of these 6 meals, was less than $30 dollars! The amount of time I saved myself throughout the week is worth more than $30….it’s priceless. On top of that, these meals are probably healthier than any fast food joint and I can portion control.
Side note: I bought everything from ALDI. It’s what I think is considered a discount grocery store. I really like it! So if you have one near you, I highly suggest you check it out.
